TUNA CAKES
Serves 3-4 (depending on how hungry they are!)
- 2 large potatoes, already boiled/cooked
- 2 T butter
- 1 can (10 oz) tuna (I use white tuna in water)
- Some chopped (fresh) parsley
- salt and pepper
- (optional: some grated carrot; some chopped green onion)
- 2 eggs, beaten (separately)
- about 1 cup or so bread crumbs
- (olive) oil
Mash up the potatoes with the butter and then mix together with the tuna, parsley, salt & pepper to taste, (carrot & onion if you wish) and one beaten egg.
Chill for about 15-20 minutes, then shape into 7-8 fat patties, or do it as I do, and form into a log. Slice the log into 8 rounds. Dip each one into the other beaten egg and then coat with bread crumbs.
Heat oil and brown the fish cakes for 2-3 minutes on each side until golden brown and heated through. Squeeze some lemon on top before serving.
Easy and light, and most of all GOOD!

Even kids like these patties — and it’s a nice non-meat meal as well.
Starting out here with a yummy recipe that doesn’t have a long-g-g ingredient list.
SHREDDED SALSA CHICKEN IN YOUR SLOW-COOKER*
6-7 boneless chicken breast halves (or thighs) – skin removed. 1 big jar of your favorite salsa (I like Trader Joes and the salsa by the Frog folks. Frog Ranch (mild and hot are both good, depending upon how much spice you’re wanting. I’m a ‘mild’ girl myself.
Put the chicken in the slow cooker and empty the jar of salsa over it. KEEP COVERED THE WHOLE TIME IT IS COOKING! Cook on LOW for the entire day (about 6 hours).
When it’s done, just shred it up with a fork and serve it on tortillas or buns. If you want to dress it up more, add chopped green onions or cilantro, sour cream and (or chopped onions if you don’t have green onions) to your tortilla. Son Number 2 likes shredded cheddar on his. I LOVE cheese (as anyone who knows me can tell you), but on this dish I let the cheese be. Good as it is.

*I’ve also done this in the oven – covered, for about an hour on high heat. Ovens vary, watch out the salsa doesn’t cook away — keep it moist till the chicken is ready to fall apart.
